Equipment

Ingredients

  • 200 g plain flour
  • 150 g unsalted butter taken straight from the fridge
  • 3 tbsp cold water
  • 6 apples sliced and cored (keeping the skins on)
  • 100 g ground almonds
  • 100 g caster sugar
  • 3 tbsp red currant jelly
  • 3 tbsp hot water

Instructions

  • Preheat the oven to 180°C (350°F).
  • Cut the butter into small pieces and rub it into the flour until the mixture resembles breadcrumbs.
  • Add the cold water and mix gently until the dough comes together as a paste.
  • Roll the dough out so it’s just larger than the tart tin, then line the tin with the pastry (it’s best to cook the pastry in a tin, as cooking on stoneware can make it soggy).
  • Place the ground almonds and sugar into the pastry case.
  • Arrange the sliced apples on top of the almond mixture.
  • Bake in the oven for 20 minutes.
  • While the tart is baking, melt the red currant jelly and hot water together in a pan.
  • After 20 minutes, remove the tart from the oven and pour the glaze over the top.
  • Return the tart to the oven and bake for a further 5 minutes.
  • Remove from the tin and allow to cool.
