  • Add the nondairy milk, vanilla extract, granulated sugar, and chopped pecans to the cooled apple mixture.
  • Stir until well combined.

  • Gently fold the wet ingredients into the dry ingredients.
  • Stir until just combined, being careful not to overmix.

Bake the Cupcakes:

  • Divide the batter evenly among the prepared cupcake liners, filling each about ¾ full.
