Asparagus with Peas Dressing

Peas are a funny little vegetable that are a hit amongst the kids. Serve this delicious side dish with rice or meat.

Ingrediënten

  • 1 Cup Trimmed Asparagus Spears
  • 1 Thin Prosciutto Slice
  • 1 Cup Green Peas
  • Cup Chicken Broth
  • 1 Teaspoon Butter
  • 1 Tablespoon Chopped Mint

Instructies

  • Bake asparagus in a pre-heated oven at 425 degrees for about 10 minutes.
  • While it is baking, heat butter in a skillet and slightly brown the peas.
  • Add in the chicken broth and mint.
  • Allow to simmer.
  • Remove asparagus from the oven and bake the prosciutto slice.
  • When the chicken broth mixture has thickened, remove it from heat.
  • Place the asparagus on the slice, top with the mixture and wrap.
  • Serve immediately.
