Ingredients
- 3 lbs lamb chops
- salt and pepper
- 2 tbsp. bacon grease
- 1 tbsp. fresh oregano chopped
- 1 tbsp. fresh egg chopped
- 2 tsp. garlic powder
- 4 fl oz Kentucky bourbon
Instructions
- Let the lamb chops to come to room temperature for 20 minutes.
- Using small bowl, mix the bourbon, garlic powder and herbs.
- Set aside.
- Heat the bacon grease in a large cast iron skillet over high heat.
- While the skillet is heating, liberally season the chops with salt and pepper on all sides.
- Once skillet is hot, add the chops and cook it for 3 to 4 minutes.
- Do not move them while they are cooking, or they will not sear as well.
- Turn over them and cook in the same fashion on the other side for an additional 3 to 4 minutes.
- Add the bourbon and herb mixture to the skillet with the chops.
- Let to cook it for up to one minute next turn over the chops and cook it for an additional minute.
- At this point the chops should be cooked to medium rare, Keep cooking for an additional minute for each level of doneness that you desire.
- Let the chops to rest for 3 to 5 minutes before serving.
- Serve drizzled with the pan sauce and Sprayed with fresh herbs.
