Baked Beans from Phillis Pellman Good

Navy beans (the “Lazy wife” variety, ) and lima beans grew in the garden or along the cornfields. Many were dried for wintertime use. As one grandmother remarked, “Baked beans are an old dish. We had no freezer and so they were a good substitute for fresh vegetables.”

Ingrediënten

  • 1 lb. dried navy beans
  • one small onion minced
  • 8 sliced of bacon or 1 cup ham cut up
  • tsp. salt
  • ¼ tsp. pepper
  • ½ cup brown sugar
  • 2 cups tomato juice
  • ½ –1 cup water from cooking beans if needed

Instructies

  • Soak beans overnight (8 cups water to 2 cups of beans).
  • Cook 2–3 hours in soaking water until beans are nearly soft.
  • Drain (save water for cooking other vegetables, since it has nutrients form the beans).
  • Add rest of ingredients to drained beans.
  • Bake at 325° for 2–3 hours.
  • If mixture becomes dry, stir in ½–1 cup soaking water.
