Balsamic Roasted Asparagus with Pearl Onions

Ingredients
- 1 pound 455 g fresh asparagus spears
- ¼ cup 60 ml balsamic vinegar
- ¼ cup 60 ml extra-virgin olive oil
- 1 tablespoon 15 g minced garlic
- 10 ounces 284 g pearl onions, peeled
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C, or gas mark 6).
- Line a baking sheet with parchment paper or aluminum foil.
- In a mixing bowl, whisk together the olive oil, balsamic vinegar, and minced garlic.
- Add the asparagus and pearl onions to the bowl and toss to coat evenly.
- Arrange the vegetables in a single layer on the prepared baking sheet.
- Season with salt and pepper.
- Bake for 20 minutes, or until the asparagus is tender yet firm, and the onions are soft and translucent.
- Serve immediately.
