Blackberry Parfait

Polanco is a beautiful zone in Mexico City, with mansions, fine restaurants, lots of great shops, and a wonderful open-air market with colorful, abundant produce and other food items. My husband and I love to stroll by all the vendors, and this recipe is a result of admiring baskets of luscious fresh blackberries that were in season during one of our trips.

Ingrediënten

Makes 4 servings

  • 2 cups Vanilla Ice Cream or purchased vanilla ice cream or frozen yogurt
  • 4 cups fresh blackberries or thawed unsweetened frozen berries
  • ½ cup sugar
  • 1 tablespoon crème de cassis liqueur
  • 1 cup Sweetened Whipped Cream
  • Fresh mint sprigs

Instructies

  • Prepare ice cream, if using homemade.
  • Put the berries in a large bowl.
  • Add the sugar and cassis.
  • Toss to mix, cover and refrigerate at least 4 hours or overnight.
  • Prepare whipped cream.
  • Then, shortly before serving, put ¼ cup sweetened berries in the bottom of each of 4 parfait or wineglasses.
  • Spoon ½ cup ice cream on the berries.
  • Add another ¼ cup of berries and top each serving with a generous dollop of whipped cream.
  • Garnish with mint sprigs.
  • Serve at once.

Notes / Tips / Wine Advice:

Berry juice will seep into the ice cream, but it still looks and tastes great.
