Ingredients
- 1 whole chicken about 4 lbs
- 2 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp lemon zest optional
- 1 lemon quartered (optional, for extra flavor)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the whole chicken under cold water and pat dry with paper towels.
- Rub the chicken with olive oil, making sure it’s evenly coated.
- In a small bowl, combine the garlic powder, onion powder, thyme, rosemary, paprika, salt, pepper, and lemon zest (if using).
- Sprinkle the seasoning mixture evenly over the chicken, rubbing it in to coat all sides.
- (Optional) Stuff the cavity of the chicken with the quartered lemon for extra flavor.
- Place the chicken breast-side up in a baking dish or on a roasting rack.
- Roast in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the chicken.
- Let the chicken rest for 10 minutes before carving.
- Slice and serve with your favorite side dishes.
