Caramel Pudding
One older woman remembers that her grandmother served this for supper on the day her family hosted the church service.
“Grussmommy never knew how many people she’d have, but she usually made caramel pudding! I love it with ground peanuts on top. I can still see Dauddy sitting there, shelling the peanuts for on top. Grussmommy always served it cold.”
Ingrediënten
- 2 Tbsp. butter
- ¾ cup brown sugar
- 1 quart milk
- 2 eggs
- 2 Tbsp. cornstarch
- 2 Tbsp. flour
- pinch of salt
- ¼ cup milk
- chopped peanuts
Instructies
- Melt the butter in a heavy saucepan.
- Add the brown sugar and stir until brown.
- Stir in 1 quart milk and warm; then set aside.
- Beat together eggs, cornstarch, flour, salt, and ¼ cup milk.
- Add to the warm milk and stir just until it reaches the boiling point.
- Remove from heat and beat with a rotary beater.
- Cool; then cover top with chopped fresh peanuts before serving.
