Carrot Salsa

Ingrediënten

  • 6 cups chopped tomatoes
  • 3 cups grated carrots
  • cups apple cider vinegar
  • cups brown sugar
  • ½ cup chopped onion
  • ¼ –½ cup chopped jalapeño peppers*
  • teaspoon salt
  • ½ teaspoon black pepper or to taste
  • ¼ cup chopped cilantro optional

Instructies

  • Combine all ingredients except cilantro (if using).
  • Bring to a boil over medium heat, stirring occasionally.
  • Boil gently until thickened, approximately 45 minutes.
  • Ladle into clean jars.
  • Process in boiling-water bath for 15 minutes.
  • Note: This salsa is almost a relish and is delicious served with meats or on crackers or chips.

Notes / Tips / Wine Advice:

*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
