Chicken Salad with Strawberries and Pecans
Whether you serve this on bread, in lettuce wraps or straight off the spoon, the strawberries add such a fresh twist on this classic salad. The crunch from the pecans gives a textural element that adds another welcome surprise!

- 2 230 gram boneless, skinless chicken breasts, cut into 3cm cubes
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¾ cup mayonnaise
- ¾ tablespoon fresh lime juice
- ½ cup chopped pecans
- ½ cup finely chopped celery
- ½ cup hulled and diced strawberries
Instructies
- Preheat air fryer at 180°C for 3 minutes.
- Season chicken with salt and pepper.
- Add chicken cubes in two batches to air fryer basket.
- Cook for 4 minutes.
- Shake gently and flip chicken.
- Cook for an additional 5 minutes.
- Check the chicken using a meat thermometer to ensure the internal temperature is at least 75°C.
- Transfer to a plate and cool.
- Chop chicken and add to a medium bowl.
- Add remaining ingredients and combine well.
- Refrigerate covered until ready to eat.
