  • 2 medium zucchini seed core discarded, peeled into thin ribbons
  • 2 teaspoons butter melted
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructies

  • Preheat air fryer at 140°C for 3 minutes.
  • In a medium bowl, toss zucchini ribbons with butter, salt and pepper.
  • Place zucchini in ungreased air fryer basket and cook for 1 minute.
  • Toss and cook for an additional 2 minutes.
  • Serve warm.

  • 2 medium avocados halved, pitted and left in skins
  • 1 teaspoon chilli powder
  • ¼ teaspoon salt

Instructies

  • Preheat air fryer at 200°C for 3 minutes.
  • Combine olive oil and lime juice in a small bowl and brush over avocado halves.
  • Combine chilli powder and salt in a separate small bowl.
  • Sprinkle over avocado halves.
  • Place avocado halves, cut sides up, in ungreased air fryer basket.
  • Cook for 7 minutes.
  • Transfer to a serving plate and serve warm.

  • ¼ cup avocado oil
  • 2 bulbs garlic unpeeled, 6mm removed from top
  • teaspoon salt

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • Drizzle avocado oil over garlic bulbs and rub it in with your finger.
  • Season each bulb with salt.
  • Roll each bulb up in a square of aluminum foil.
  • Place wrapped bulbs in ungreased air fryer basket.
  • Cook for 45 minutes.
  • Unwrap each bulb.
  • When cooled, squeeze roasted garlic from each clove and use as desired.
  • Refrigerate unused bulbs in an airtight container up to three days.

  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • 3 large parsnips peeled, halved lengthwise and cut into 3cm half-moons

For Tahini Dressing

  • 1 tablespoon tahini
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon water
  • 1 clove garlic peeled and minced
  • 1 tablespoon chopped fresh parsley

Instructies

To make Parsnips:

  • Preheat air fryer at 190°C for 3 minutes.
  • In a medium bowl, whisk together olive oil and salt.
  • Add parsnips and toss.
  • Add parsnips to ungreased air fryer basket and cook for 5 minutes.
  • Toss, then cook for an additional 5 minutes.

To make Tahini Dressing:

  • While parsnips are cooking, whisk together tahini, lemon juice, water and garlic in a medium bowl.
  • Add cooked parsnips and toss.
  • Transfer to a medium serving dish.
  • Garnish with parsley.
  • Serve.

Notes / Tips / Wine Advice:

WHAT ABOUT THE CHOPPED-OFF SPRING ONIONS?
Some of the top greens are going to be cut off for uniformity and to fit in your air fryer basket. But there is no need to throw these away — place them in a container with water for up to one week, changing out the water every three days. These are a perfect flavour addition when making a bone broth or soup base.

  • 56 grams cream cheese room temperature
  • ½ cup unsweetened almond milk

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • In a large bowl, toss cauliflower florets and swede with 1 ½ tablespoons melted butter and ½ teaspoon salt.
  • Place mixture in ungreased air fryer basket.
  • Cook for 5 minutes.
  • Toss mixture, then cook for an additional 5 minutes.
  • Add garlic.
  • Cook for another 5 minutes.
  • Using a stand blender or food processor, blend or pulse cooked ingredients with remaining butter, remaining salt, pepper, cream cheese and almond milk.
