Variation
Use ¾ cup celery, ½ cup carrots, ¼ cup onion, ¼ cup corn, 4 cups broth, and leave out rice. Also add black pepper, garlic powder, 2 cups leeks, and 1 skinned baked potato.
Remove once sweet potatoes are tender and place in food processor
Blend until smooth
Replace into slow cooker
Add all other ingredients to slow cooker

Variation
Use 5 sweet potatoes, 1 onion, 1 apple, 1 can condensed chicken stock, and top with water. Once cooked, remove liquid until you reach desired consistency. Finally, add cream to taste, and a nice sprinkle of allspice.
Fry onion in butter with fresh dill and add to crockpot along with the other ingredients. This softens the taste of the onion. Substitute 1 cup of the stock with a ½ cup of water and ½ cup of white wine. When serving, swirl plain yogurt in each bowl along chopped fresh dill to add both color and fresh flavor.
Chicken Pozole: Use chicken breasts instead of pork. Add extra olive oil when browning to enhance richness. Add 12 oz chicken broth to reduce thickness.
Skinny: Cut back lentils by ½ cup, broth by 1 ½ cups and the coconut milk by ½ cup. Use 5 carrots and extra cumin. Thicken soup by running immersion blender slightly before adding to crock pot.
