Cauliflower ‘Potato’ Salad
An intriguing recipe that will immediately win your heart! I even think I can say that I now prefer this to traditional potato salad!
Ingrediënten
- large cauliflower into florets
- 4 hard-boiled eggs diced
- ¾ cup cooked ham diced
- 1 carrot grated
- 4 green onions thinly sliced
- ¼ cup mayonnaise
- ¼ cup sour cream
- ¼ cup sweet relish
- 1 tbsp. Dijon mustard
- Chopped parsley to serve
- Salt and pepper to taste
Instructies
- Bring a large pot of salted water to a boil and add the cauliflower.
- Cook until al dente, about 6 minutes.
- Drain and cool.
- In a bowl, combine all ingredients, season and stir gently.
- Refrigerate at least 30 minutes before serving.
