Cherry Tomato-Caper Salad
Reduce the sodium in this recipe by rinsing the capers well and omitting the salt.

- 1 tablespoon drained small capers
- 1 tablespoon balsamic vinegar
- 2 teaspoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 large cherry tomatoes halved
- 3 fresh basil leaves shredded
- Bibb lettuce leaves optional
Instructies
- Stir together first 5 ingredients.
- Drizzle over tomatoes, tossing to coat.
- Let stand at least 15 minutes or up to 1 hour.
- Sprinkle with basil.
- Serve over lettuce, if desired.
