Cherry Tomato-Caper Salad

  • 1 tablespoon drained small capers
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 8 large cherry tomatoes halved
  • 3 fresh basil leaves shredded
  • Bibb lettuce leaves optional

Instructies

  • Stir together first 5 ingredients.
  • Drizzle over tomatoes, tossing to coat.
  • Let stand at least 15 minutes or up to 1 hour.
  • Sprinkle with basil.
  • Serve over lettuce, if desired.
