Ingrediënten

  • 2 tablespoons olive oil
  • 2 carrots peeled and chopped
  • 1 onion chopped
  • 3 stalks celery chopped
  • 4 quarts chicken broth
  • 4 boneless skinless chicken breasts, cooked and shredded
  • cup wild rice uncooked
  • 2 teaspoons dried tarragon
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste
  • 3 Granny Smith apples peeled, cored, and chopped

Instructies

  • Heat olive oil in a stockpot over medium heat.
  • Sauté carrots, onion, and celery until tender, about 10 minutes.
  • Add chicken broth, shredded chicken, wild rice, dried tarragon, fresh parsley, salt, and pepper.
  • Stir to combine.
  • Reduce heat to medium-low, cover, and simmer for 45 minutes.
  • Add chopped Granny Smith apples and simmer for an additional 40 minutes, or until the apples are tender and the rice is cooked.
  • Adjust seasoning if needed.
