Chicken and Apple Wild Rice Soup
Ingrediënten
- 2 tablespoons olive oil
- 2 carrots peeled and chopped
- 1 onion chopped
- 3 stalks celery chopped
- 4 quarts chicken broth
- 4 boneless skinless chicken breasts, cooked and shredded
- ⅓ cup wild rice uncooked
- 2 teaspoons dried tarragon
- 1 tablespoon fresh parsley chopped
- Salt and pepper to taste
- 3 Granny Smith apples peeled, cored, and chopped
Instructies
- Heat olive oil in a stockpot over medium heat.
- Sauté carrots, onion, and celery until tender, about 10 minutes.
- Add chicken broth, shredded chicken, wild rice, dried tarragon, fresh parsley, salt, and pepper.
- Stir to combine.
- Reduce heat to medium-low, cover, and simmer for 45 minutes.
- Add chopped Granny Smith apples and simmer for an additional 40 minutes, or until the apples are tender and the rice is cooked.
- Adjust seasoning if needed.
