Ingrediënten

  • 1 roasting chicken 3-4 lbs. (you can use a young duck if you prefer)
  • 1 onion quartered
  • 2 quarts sauerkraut
  • 1 cup water
  • 2 T. sugar

Instructies

  • Preheat oven to 450°.
  • Place chicken in a roasting pan; sprinkle with salt and pepper.
  • Stuff the cavity with the onion.
  • Add the sauerkraut and water around the chicken.
  • Sprinkle sugar over the sauerkraut; cover and place the chicken in the oven, reducing the heat to 375°.
  • Bake until chicken is cooked through and tender and juices run clear, about 1½ hours.
