Preheat oven to 450°.
Place chicken in a roasting pan; sprinkle with salt and pepper.
Stuff the cavity with the onion.
Add the sauerkraut and water around the chicken.
Sprinkle sugar over the sauerkraut; cover and place the chicken in the oven, reducing the heat to 375°.
Bake until chicken is cooked through and tender and juices run clear, about 1½ hours.
