Chicken Wings with Tamarind and Chipotle
Pollo con Tamarindo y ChipotleChicken wings are very popular as a finger food for informal parties or picnics. These are baked in a spicy contemporary tamarind barbecue sauce, similar to one from Santo Coyote Restaurant in Guadalajara.
Ingrediënten
Makes 24 appetizers
- Tamarind Paste
- 2 medium garlic cloves finely chopped
- 2 tablespoons ketchup
- 1 chipotle chile seeded, veins removed
- 1 tablespoon frozen pineapple concentrate undiluted
- 2 teaspoons honey
- ½ teaspoon dried oregano Mexican variety preferred, crumbled
- ½ teaspoon dried thyme
- ¼ teaspoon ground cumin
- ½ teaspoon salt
- 12 chicken wings with tips removed, and cut at the joint
Instructies
- Prepare the tamarind paste.
- Then, measure out ½ cup and put into a blender.
- Add all of the remaining ingredients, except the chicken wings, to the blender.
- Purée until smooth.
- Transfer to a bowl and reserve.
- Preheat the oven to 350°.
- Place the chicken wings in a single layer on a baking sheet.
- Bake, turning once, 30 minutes.
- Reduce the oven temperature to 325°.
- Brush the chicken with the marinade and continue baking until dark brown and tender, about 45 minutes more, basting with additional marinade every 15 minutes.
