- 2 cups shredded Mexican cheese less fat
- ½ teaspoon pepper
- ½ teaspoon ground cumin
- 1 teaspoon chili powder
- 1 ¼ teaspoons salt
- 2/4 cup chopped green chilies
- ¾ cup tomato paste
- 2 cups kidney beans drained and rinsed
- 3 ½ cups diced tomatoes undrained
- 2 minced garlic cloves
- 1 chopped onion
- 2 pounds ground beef
- 1 cup uncooked elbow macaroni
Instructies
- Prepare macaroni according to package instructions.
- In a large nonstick skillet over medium heat, cook onion, garlic, and beef until the meat changes color from pink.
- Break up the meat into crumbles and remove from the skillet.
- Mix in seasonings, green chilies, tomato paste, beans, and tomatoes.
- Rinse macaroni and add it to the beef mixture, mixing well.
- Preheat the oven to 375°F.
- Coat a 13×9-inch baking dish with cooking spray.
- Bake and cover until the mixture is bubbly for 25 to 30 minutes.
- Remove the cover, sprinkle with cheese, and bake for an additional 5 to 7 minutes or until the cheese melts.
- Garnish with sliced green onions on top if desired.
