Chili Mac Casserole

- Elbow macaroni 1 cup uncooked
- Ground lean beef 2 pounds
- Chopped onion 1 medium
- Minced garlic cloves 2
- Undrained diced tomatoes 1 can (28 ounces)
- Drained and rinsed kidney beans 1 can (16 ounces)
- Tomato paste 1 can 6 ounces
- Green chili 1 can 4 ounces, chopped
- Salt 1-1/4 teaspoon
- Chili powder 1 teaspoon
- Ground cumin ½ teaspoon
- Pepper ½ teaspoon
- Mexican blend cheese 2 cups shredded and reduced-fat
- Sliced green onion optional
Instructies
- Cook the macaroni according to the direction of the package.
- After this, take a large nonstick skillet.
- Cook the beef, garlic, and onion on medium heat until the meat changes its color.
- Break the meat to make its crumbles, then drain it.
- Stir it in the seasoning, cumin, chili powder, chili, tomato paste, beans, and tomato.
- Drain the macaroni, then add it to the mixture of beef.
- Convert it in the 13×9-inch baking dish coated with the cooking oil spray.
- Bake and cover it for just 375°F until it gets bubbly for 25 to 30 minutes.
- Uncover it and sprinkle it with the cheese.
- Bake it until the cheese gets melted for just 5 to 8 minutes more.
- If you want, then top it with the green sliced onion.
- Serve it warm and enjoy.
