Chinese scallion and ginger sauce
This sauce is a great example of how the simplest preparations can offer the most complex tastes. This sauce is usually served as an accompaniment to dim sum in Chinese restaurants, and it is surely addictive. It’s great with dumplings, spring rolls and savory crêpes as well as pan-seared meats or stir-fried vegetables. It’s so good you’ll find yourself looking for things to put it on. Best of all, it’s incredibly easy to prepare.
Ingrediënten
MAKES: 120 ml
- 120 ml safflower oil
- 1 2-inch [5-cm] piece of ginger, grated
- 5 scallions trimmed and minced finely
Instructies
- Heat the safflower oil in a small saucepan over low heat and add the ginger and scallions.
- Gently heat this mixture for 3 to 4 minutes but do not allow the vegetables to fry.
- Remove from the heat when the sauce becomes aromatic.
- Cool and serve slightly warm or room temperature as a condiment or dipping sauce with finger foods like dumplings, shumai, spring or summer rolls.
