Chocolate Zucchini Bread

Ingrediënten

  • 3 eggs beaten
  • 1 cup cooking oil
  • cups sugar
  • 1 T. vanilla
  • 2 cups grated zucchini
  • 3 cups all-purpose flour or use half whole wheat and half all-purpose
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ cup unsweetened cocoa
  • ½ cup chopped walnuts or pecans optional

Instructies

  • Preheat the oven to 350°.
  • In a large bowl, mix together the eggs, oil, sugar, and vanilla.
  • Add the zucchini and stir.
  • In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cocoa.
  • Add the flour mixture to the zucchini mixture and blend well.
  • Add the nuts, if using, and stir again.
  • Grease and flour 2 loaf pans.
  • Pour in the batter.
  • Bake for 45 minutes.
  • Cool the bread in the pans for 10 to 15 minutes.
  • Remove the loaves to a wire rack to finish cooling.
