Chorizo and Red Pepper Frittata

Ingrediënten

Serves 4-6:

  • 2 tablespoons olive oil
  • 4 medium potatoes peeled and sliced into 1/8-inch rounds
  • 1 medium onion finely chopped
  • Salt and freshly ground black pepper to taste
  • 6 large eggs
  • 2 ounces chorizo sausage diced
  • ¼ cup finely chopped roasted red peppers pimientos

Instructies

Sauté the Potatoes and Onions:

  • In a non-stick oven-safe skillet over medium heat, add the olive oil.
  • Add the sliced potatoes and finely chopped onion, seasoning each layer with salt and freshly ground black pepper.
  • Cook, turning occasionally, until the potatoes are tender but not browned, about 20 minutes.
  • Transfer the cooked potatoes and onions to a colander to drain.

Prepare the Frittata Mixture:

  • In a large bowl, beat the eggs and season with salt and freshly ground black pepper.
  • Stir in the diced chorizo and finely chopped roasted red peppers.

Cook the Frittata:

  • Preheat your oven’s broiler.
  • Return the skillet to the stove over medium-high heat.
  • Pour in the frittata mixture, spreading it evenly.
  • Reduce the heat to medium-high and cook until the bottom starts to set.

Broil the Frittata:

  • Place the skillet under the broiler and cook until the top is set and slightly browned, about 3-4 minutes.

Serve:

  • Once the frittata is cooked through and slightly browned on top, cut it into wedges and serve hot or at room temperature.
