In this contemporary version inspired by Galicia, we’ve transformed the classic Spanish omelet into a flavorful and colorful frittata.
Ingrediënten
Serves 4-6:
- 2 tablespoons olive oil
- 4 medium potatoes peeled and sliced into 1/8-inch rounds
- 1 medium onion finely chopped
- Salt and freshly ground black pepper to taste
- 6 large eggs
- 2 ounces chorizo sausage diced
- ¼ cup finely chopped roasted red peppers pimientos
Instructies
Sauté the Potatoes and Onions:
- In a non-stick oven-safe skillet over medium heat, add the olive oil.
- Add the sliced potatoes and finely chopped onion, seasoning each layer with salt and freshly ground black pepper.
- Cook, turning occasionally, until the potatoes are tender but not browned, about 20 minutes.
- Transfer the cooked potatoes and onions to a colander to drain.
Prepare the Frittata Mixture:
- In a large bowl, beat the eggs and season with salt and freshly ground black pepper.
- Stir in the diced chorizo and finely chopped roasted red peppers.
Cook the Frittata:
- Preheat your oven’s broiler.
- Return the skillet to the stove over medium-high heat.
- Pour in the frittata mixture, spreading it evenly.
- Reduce the heat to medium-high and cook until the bottom starts to set.
Broil the Frittata:
- Place the skillet under the broiler and cook until the top is set and slightly browned, about 3-4 minutes.
Serve:
- Once the frittata is cooked through and slightly browned on top, cut it into wedges and serve hot or at room temperature.
