Citrus-Infused Spiced Red Cabbage
Ingrediënten
- 1 large red cabbage about 1kg/2lb 4oz
- 25 g butter
- 2 red onions finely chopped
- Finely grated zest and juice of 1 orange
- 1 cinnamon stick
- 150 ml port
- 1 tbsp red wine vinegar
- 1 tbsp brown sugar

- A splash of crème de cassis

- Cloves star anise, caraway seeds, juniper berries

- Chopped apple
Instructies
Prepare the Cabbage:
- Peel off the outer leaves of the cabbage, then cut it into quarters and slice out the core.
- Use a sharp knife or the slicing attachment of a food processor to thinly slice the cabbage.
Cooking:
- Heat the butter in a large saucepan, then add the chopped onions and gently fry until softened, about 5 minutes.
- Add the orange zest, cinnamon stick, and cook for an additional 1 minute.
- Add the shredded cabbage to the pan.
- Pour over the port, red wine vinegar, orange juice, and 150ml water.
- Optionally, add a splash of crème de cassis for depth of flavor.
- If desired, enhance the spiced flavors by adding cloves, star anise, caraway seeds, and juniper berries.
- For a touch of sweetness, stir in brown sugar.
- Optionally, add chopped apple for texture and fruity notes.
Cooking Time:
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover the pan and cook for 45 minutes to 1 hour until the cabbage is softened.
Serve:
- Once cooked, remove the cinnamon stick and any whole spices.
- Serve your Citrus-Infused Spiced Red Cabbage as a delicious side dish for your Christmas feast.
Notes / Tips / Wine Advice:
If you prefer a sweeter result, you can add 1 tablespoon of red currant jelly along with the sugar.
