Citrus-Infused Spiced Red Cabbage

Ingrediënten

  • 1 large red cabbage about 1kg/2lb 4oz
  • 25 g butter
  • 2 red onions finely chopped
  • Finely grated zest and juice of 1 orange
  • 1 cinnamon stick
  • 150 ml port
  • 1 tbsp red wine vinegar
  • 1 tbsp brown sugar

Optional:

  • A splash of crème de cassis

Optional:

  • Cloves star anise, caraway seeds, juniper berries

Optional:

  • Chopped apple

Instructies

Prepare the Cabbage:

  • Peel off the outer leaves of the cabbage, then cut it into quarters and slice out the core.
  • Use a sharp knife or the slicing attachment of a food processor to thinly slice the cabbage.

Cooking:

  • Heat the butter in a large saucepan, then add the chopped onions and gently fry until softened, about 5 minutes.
  • Add the orange zest, cinnamon stick, and cook for an additional 1 minute.
  • Add the shredded cabbage to the pan.
  • Pour over the port, red wine vinegar, orange juice, and 150ml water.
  • Optionally, add a splash of crème de cassis for depth of flavor.
  • If desired, enhance the spiced flavors by adding cloves, star anise, caraway seeds, and juniper berries.
  • For a touch of sweetness, stir in brown sugar.
  • Optionally, add chopped apple for texture and fruity notes.

Cooking Time:

  • Bring the mixture to a boil, then reduce the heat to a simmer.
  • Cover the pan and cook for 45 minutes to 1 hour until the cabbage is softened.

Serve:

  • Once cooked, remove the cinnamon stick and any whole spices.
  • Serve your Citrus-Infused Spiced Red Cabbage as a delicious side dish for your Christmas feast.

Notes / Tips / Wine Advice:

If you prefer a sweeter result, you can add 1 tablespoon of red currant jelly along with the sugar.
This dish can be made up to 2 days in advance and kept in the fridge. Reheat with a little water in a saucepan or microwave.
