Classic Gooseberry Fool
A light and creamy traditional British dessert, Gooseberry Fool combines sweet-tart gooseberries with whipped cream for a refreshing summer treat.

Ingredients
- 500 g red or green gooseberries
- 3-4 tbsp caster sugar adjust to taste
- 2 tbsp water
- 300 ml double cream
Instructions
- Top and tail the gooseberries, then place them in a saucepan with the water and sugar.
- Bring to a boil, then reduce the heat and simmer until the gooseberries are soft.
- Mash the gooseberries with a fork and allow them to cool completely.
- Add more sugar if needed, depending on the tartness of the fruit.
- In a mixing bowl, whip the double cream until it forms soft peaks.
- Gently fold the cooled gooseberries into the whipped cream.
- Spoon into serving dishes and refrigerate until chilled.
