Coca-Cola Smoked Beef Tenderloin
Beef tenderloin is a showstopper. It is as delicate and as flavorful as it comes, so you have to handle it with care. But the good news is that it doesn’t need a whole lot of work to make it delicious. For example, it’s got so much natural flavor that it wouldn’t even benefit from injecting it with a flavor-building solution. The most important rule of thumb for cooking beef tenderloin: Do not overcook it. It’ll become tough and ruined. The best way to enjoy beef tenderloin is medium rare; if you like your meat well-done like my daddy did, cook another cut of meat, like the T-bone instead

- 1 2Âľ- to 3-pound beef tenderloin roast
- 4 cups beef broth
- ½ cup distilled white vinegar
- 1 cup packed dark brown sugar
- 1 12-ounce can Coca-Cola
Instructies
- Using paper towels or a clean kitchen towel, pat the tenderloin dry all over.
- In a large deep aluminum or other roasting pan, stir together the broth, vinegar, brown sugar, and Coca-Cola.
- Add the tenderloin and marinate, covered, in the refrigerator for at least 4 hours, or overnight.
- When you are ready to cook the tenderloin, heat the smoker to 275°F.
- Discard the marinade and transfer the tenderloin to a clean, large, deep aluminum or other roasting pan.
- Put the pan in the smoker and cook for about 1½ hours, or until the internal temperature at the center of the tenderloin reaches 155°F.
- Transfer the tenderloin to a cutting board and let it rest for 10 minutes.
- Cut the tenderloin crosswise into ½-inch thick slices, and serve.
