Coca “La Plana”
Tomato and Green Pepper Pies
Ingrediënten
Makes 5 Small Pies
- ½ recipe for Empanada Dough Basic Long Loaf dough, or pizza dough
- 2 tablespoons vegetable oil
- ½ pound firm ripe tomatoes cut into very thin slices
- 2 medium green bell peppers cut into very thin slices
- 1 small onion thinly sliced
- 2 garlic cloves finely chopped
- Salt to taste
- Freshly ground black pepper to taste
- 3 tablespoons olive oil
Instructies
- Prepare the bread dough or pizza dough as instructed in steps 1 and 2 of the recipe.
- Punch down the dough and knead in 1 tablespoon of vegetable oil, adding flour if necessary.
- Divide the dough into 5 equal pieces and shape them into balls.
- Roll each piece out into a 6-inch round, about 1/8-inch thick, and curl up the edges to create a rim.
- Place the dough rounds on a baking sheet.
- Preheat the oven to 350°F (175°C).
- Arrange the tomato slices in overlapping circles over each dough round.
- Place 3 bell pepper rings over the tomatoes on each pie.
- Scatter the sliced onion and chopped garlic over the pies.
- Season with salt and freshly ground black pepper.
- Finally, drizzle each pie with 1 teaspoon of olive oil.
- Bake the pies for about 20 minutes or until the vegetables are tender, and the crust is lightly golden.
