Tomato and Green Pepper Pies

Ingrediënten

Makes 5 Small Pies

  • ½ recipe for Empanada Dough Basic Long Loaf dough, or pizza dough
  • 2 tablespoons vegetable oil
  • ½ pound firm ripe tomatoes cut into very thin slices
  • 2 medium green bell peppers cut into very thin slices
  • 1 small onion thinly sliced
  • 2 garlic cloves finely chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • 3 tablespoons olive oil

Instructies

  • Prepare the bread dough or pizza dough as instructed in steps 1 and 2 of the recipe.
  • Punch down the dough and knead in 1 tablespoon of vegetable oil, adding flour if necessary.
  • Divide the dough into 5 equal pieces and shape them into balls.
  • Roll each piece out into a 6-inch round, about 1/8-inch thick, and curl up the edges to create a rim.
  • Place the dough rounds on a baking sheet.
  • Preheat the oven to 350°F (175°C).
  • Arrange the tomato slices in overlapping circles over each dough round.
  • Place 3 bell pepper rings over the tomatoes on each pie.
  • Scatter the sliced onion and chopped garlic over the pies.
  • Season with salt and freshly ground black pepper.
  • Finally, drizzle each pie with 1 teaspoon of olive oil.
  • Bake the pies for about 20 minutes or until the vegetables are tender, and the crust is lightly golden.
