Cooked Dried Corn
Field corn is roasted for grinding into cornmeal flour. Sweet corn is dried and then eaten as a hot vegetable. When the sweet corn season has passed, this dish was prepared. Today, dried sweet corn is produced commercially in Lancaster County for those who no longer dry their own.
Ingrediënten
- 2 cups dried sweet corn
- warm water
- 1 tsp. salt
- 2 tsp. sugar
- ½ cup cream or sweet milk
Instructies
- Soak corn for 1 hour in warm water that nearly covers the corn.
- Then cook corn until it is soft and the water is almost completely absorbed.
- Stir in salt, sugar, and cream or milk and bring to a boil.
- Serve.
