Sautéed cabbage and corn is a quick way to add a serving of everyday vegetables to a main dish. Fresh salsa can be added to the vegetables during the last minute of cooking, if desired. The cabbage and corn combination goes well with roasted meats and poultry

Ingrediënten

Makes 4 servings

  • 2 tablespoons unsalted butter
  • ¼ white onion chopped
  • ½ head of cabbage chopped into 1⁄2-inch pieces
  • cups corn kernels from about 2 ears of corn, or thawed, if frozen
  • 1 jalapeño chile seeded and finely chopped
  • ½ teaspoon salt

Instructies

  • Melt the butter in a large skillet over medium heat.
  • Add the onion and cook until softened, about 3 minutes.
  • Add the cabbage and cook, stirring, until wilted, 3 to 4 minutes.
  • Add the corn, jalapeño, and salt.
  • Cook, stirring frequently, until the corn is tender, about 3 minutes.

Serve hot.
