Cracklin’ Pigskins
Serves 4 To 6 For Snacks
This recipe can easily be doubled or tripled, depending on how much pigskin you are able to get your hands on.
Ingrediënten
- About 1½ pounds hog skin from a whole hog or shoulder or belly
- â…“ cup kosher salt
Instructies
- Preheat the oven to 300°F.
- Using a sharp paring knife, scrape any fat off the skin.
- Using kitchen shears, cut the skin into 1-inch pieces, about the size and shape of Triscuits, or as close to that ideal as you can make them.
- Place the skin pieces on top of a wire rack set in a large sheet pan and sprinkle them all over with the salt.
- Cook the skins in the oven until all of the fat is rendered in the bottom of the sheet pan and the skins have become golden brown and crispy—this usually takes about 3½ hours.
- When the skins are golden and crispy, remove the pan from the oven.
- Transfer the skins to paper towels to further drain and to cool.
- Dust the cracklin’ skins with your favorite barbecue rub (or make your own) and dip them in your favorite barbecue sauce (or make your own, ), if you like.
