Crashed Fried Eggs and Potatoes

Owner Lucio Blázquez, a charming and generous man, shared his recipe for this dish. Huevos Estrellados is a creative twist on two beloved Spanish dishes: fried eggs and fried potatoes. Lucio cuts up the egg after it's cooked and blends it with the potatoes, giving this traditional dish a new and exciting spin. Typically, Huevos Estrellados is the first dish served for dinner since it's a favorite among Spaniards, including the Spanish King.

Ingrediënten

MAKES 1 SERVING:

  • 1 medium potato peeled and cut lengthwise into 1/2-inch fries
  • Olive oil for frying
  • Salt
  • 2 tablespoons of olive oil
  • 2 large eggs at room temperature

Instructies

  • Deep-fry the potato in two stages.
  • First, heat at least 1 inch of oil in a small skillet over low heat, or use a deep fryer set at 300°F.
  • Add the potato slices and simmer until softened but not browned.
  • Transfer them with a slotted spoon to paper towels and let them drain.
  • Preheat the oven to 200°F.
  • Heat the oil in the skillet over medium-high heat, or set the deep fryer to 350°F.
  • Return the potatoes to the oil for a few seconds until they are crisped but not browned.
  • Let them drain again.
  • Season with salt, arrange them in a shallow individual earthenware casserole dish, and keep them warm in the oven.
  • Meanwhile, heat 2 tablespoons of oil in a medium skillet over medium heat until it reaches the smoking point.
  • Break the eggs into the hot oil and cook very briefly until they are just set underneath.
  • Instead of flipping, carefully roll them over with the aid of a pancake turner; they should not brown.
  • Season with salt and place them over the potatoes.
  • Cut up the eggs and potatoes so that the yolks blend with the potatoes, and serve hot.
