Cream Cheese Chicken Roulade

Ingrediënten

  • ¾ C. whipped cream cheese
  • ½ C. thinly-sliced sun-dried tomatoes
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 6 skinless boneless chicken breasts – halved horizontally and lbed thin
  • ¾ C. heavy whipping cream
  • 2 tbsps olive oil
  • tsp salt
  • C. grated Parmesan cheese
  • 4 oz chopped fresh basil
  • salt and pepper to taste
  • 1 9.74 oz package Idahoan Signature™ Russets
  • Mashed Potatoes

Instructies

  • Before you do anything set the oven to 375 F.
  • Grease a casserole dish.
  • Get a large mixing bowl: Add the whipped cream cheese, sun-dried tomatoes, garlic powder, and onion powder then mix them well to make the filling.
  • Lay the chicken slices on a working surface.
  • Spoon the filling into the chicken slices and roll them.
  • Place them chicken roulades then season them with some salt and pepper.
  • Place the chicken roulades in the casserole dish.
  • Cook them in the oven for 35 min.
  • Cook the mashed potato according to the manufacturer’s instructions.
  • Place a large saucepan on medium heat.
  • Add the heavy whipping cream, olive oil, and salt.
  • Cook them until they start boiling while stirring all the time.
  • Cook the mix for 4 min until it becomes thick to make the sauce.
  • Fold in the basil with cheese.
  • Turn off the heat.
  • Serve the chicken roulades with mashed potato and cream sauce.
