Creamy Mashed Cauliflower with Savory Stewed Mushrooms

For the Mashed Cauliflower:
- 3 Yukon Gold potatoes peeled and diced
- 3 cloves garlic peeled
- 6 cups milk
- 2 cauliflowers cut into 1-inch pieces
- ½ cup heavy cream
- 2 tbsp lemon juice
- Salt and freshly ground pepper to taste
For the Stewed Mushrooms:
- 3 tbsp olive oil
- 3 shallots chopped
- 1 clove garlic chopped
- 1 ½ lb sliced mushrooms
- 2 tsp chopped thyme
- Salt and freshly ground pepper to taste
- ¼ cup red wine
- ¼ cup butter cut into cubes
- 2 tbsp chopped Italian parsley
Instructies
- In a large pot, combine the diced potatoes, peeled garlic cloves, and milk.
- Bring to a boil over medium-high heat.
- Add the cauliflower pieces and cook for 10-15 minutes or until the potatoes and cauliflower are tender.
- Drain the cooked vegetables, reserving 1/2 cup of the cooking liquid.
- Transfer the vegetables to a food processor.
- Add the heavy cream to the food processor and puree the vegetables until smooth.
- If necessary, add some of the reserved cooking liquid to achieve the desired consistency.
- Season with salt, pepper, and lemon juice.
- Reheat before serving.
- For the stewed mushrooms, heat olive oil in a large skillet over high heat.
- Add the chopped shallots and garlic, sautéing for about 30 seconds.
- Add the sliced mushrooms and chopped thyme to the skillet.
- Sauté until the mushrooms have released their juices, about 4 minutes.
- Season with salt and pepper.
- Pour in the red wine and bring to a boil.
- Allow the mixture to reduce slightly, about 5 minutes.
- Reduce the heat to low and add the cubes of butter to the skillet.
- Simmer until the sauce thickens slightly and coats the mushrooms, about 2 minutes.
- Adjust the seasoning if necessary and stir in the chopped parsley.
- To serve, ladle a portion of the mashed cauliflower into bowls.
- Top with the stewed mushrooms and drizzle with some of the sauce.
