Ingrediënten

  • 8 celery sticks chopped
  • 700 g/11/2lb onions chopped
  • 1.8 kg/4lb red potatoes diced
  • 900 g/2lb canned clams with juice
  • 3 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 225 ml/8fl oz fish bouillon
  • 2 teaspoons ground white pepper
  • 225 g/8oz butter
  • 250 g/9oz plain flour
  • 3 garlic cloves finely chopped
  • 1.2 litres/2pt milk

Instructies

  • Clam & Veggie Blend: In a large heavy saucepan, combine chopped celery, onions, diced red potatoes, clams with juice, dried thyme, dried oregano, dried basil, fish bouillon, and ground white pepper.
  • Gently cook for 30–45 minutes until the vegetables and potatoes are soft.
  • Roux Creation: To make a roux, melt butter in a small heavy pan.
  • Add flour and chopped garlic, stirring constantly with a wooden spoon for a few minutes until slightly brown.
  • Creamy Fusion: Combine the roux with the vegetable mixture.
  • Add milk, stir well, and cook for an additional 10 minutes.
  • Serve with Warmth: Ladle the Creamy New England Clam Delight into bowls.
