Crispy Seitan Bacon

Ingredients
- 1 clove garlic grated
- 2 tablespoons 16 g nutritional yeast
- ¼ cup 20 g whole wheat panko or other bread crumbs
- ¼ cup 36 g vital wheat gluten flour
- ½ cup 128 g cooked cannellini beans, drained and rinsed
- 1 tablespoon 15 ml liquid smoke
- 3 tablespoons 45 ml soy sauce
- 1 tablespoon 17 g tomato paste
- 1 teaspoon canola oil
- 2 tablespoons 30 ml pure maple syrup
Instructions
- In a food processor, blend all the ingredients until smooth and pastelike.
- Scrape the sides occasionally.
- Preheat the oven to 375°F (190°C, or gas mark 5).
- Line a baking sheet with parchment paper or a silicone baking mat.
- Scoop about 1½ tablespoons (30 g) of the seitan paste and pat it down into the shape of bacon strips.
- Spread the paste as thinly as possible.
- Bake for 15 minutes, turning halfway through the baking time, until the strips are brown and crispy.
- For extra crispiness, fry the leftover strips in a pan for a few seconds.
