Crock Pot Pozole

Ingrediënten

  • 1-1 ½ lb pork ribs – boneless
  • 1 onion – chopped
  • 29 oz can white hominy – drained Pozole
  • 14 ½ oz can diced tomatoes
  • 2-3 cups chicken stock
  • 2 garlic cloves – minced
  • 4 oz can green chili peppers – chopped
  • 1 tsp salt
  • ½ tsp thyme
  • ¼ tsp cumin

Instructies

  • Cube ribs and brown pork in oiled pan
  • Sauté onion
  • Drain fat
  • Combine in crock pot all ingredients
  • Cook on low for 5-6 hours

Serves 6 | Total time: 5 hrs 30 mins

Variation

Chicken Pozole:
Use chicken breasts instead of pork. Add extra olive oil when browning to enhance richness. Add 12 oz chicken broth to reduce thickness.
