Ingredients

  • 4 Pork chops bone-in or boneless
  • 1 tbsp Olive oil
  • 1 Onion sliced
  • 8 oz Mushrooms sliced
  • 2 cloves Garlic minced
  • 1 cup Chicken broth
  • ½ cup Heavy cream
  • 2 tbsp Dijon mustard
  • 1 tbsp Thyme fresh or dried
  • 1 tbsp Cornstarch or gluten-free thickener
  • 2 tbsp Water
  • Salt and pepper to taste

Instructions

  • Season pork chops with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear pork chops on both sides until golden brown.
  • Place seared pork chops in the slow cooker.
  • In the same skillet, add sliced onion and mushrooms.
  • Cook until softened, about 5-7 minutes.
  • Add minced garlic and cook for 1 minute more.
  • Pour chicken broth into the skillet and scrape up any browned bits.
  • Pour the mushroom mixture over the pork chops in the slow cooker.
