Tuscan Herb Slow-Cooked Chicken
Tender chicken simmered in a rich tomato and herb sauce. A simple, flavorful Italian meal perfect for a cozy dinner.

Ingrediënten
- 4 boneless skinless chicken thighs (or breasts)
- 1 28 oz can crushed tomatoes
- 1 onion chopped
- 2 cloves garlic minced
- 1 tbsp dried oregano
- 1 tbsp dried basil
- ½ tsp dried thyme
- ¼ tsp red pepper flakes optional
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Instructies
- Season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken thighs for 2-3 minutes per side, until golden brown.
- Place chopped onion in the bottom of the slow cooker.
- Add minced garlic, dried oregano, basil, thyme, and red pepper flakes (if using).
- Pour crushed tomatoes over the onion and spices.
- Place the seared chicken thighs on top of the tomato sauce.
- Cover and cook on low for 4-6 hours, or until chicken is tender and cooked through.
- Shred the chicken with two forks.
- Stir the shredded chicken back into the sauce.
- Garnish with fresh parsley before serving.
- Serve hot.
