  • 4 boneless skinless chicken thighs (or breasts)
  • 1 28 oz can crushed tomatoes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes optional
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructies

  • Season chicken thighs with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken thighs for 2-3 minutes per side, until golden brown.
  • Place chopped onion in the bottom of the slow cooker.
  • Add minced garlic, dried oregano, basil, thyme, and red pepper flakes (if using).
  • Pour crushed tomatoes over the onion and spices.
  • Place the seared chicken thighs on top of the tomato sauce.
  • Cover and cook on low for 4-6 hours, or until chicken is tender and cooked through.
  • Shred the chicken with two forks.
  • Stir the shredded chicken back into the sauce.
  • Garnish with fresh parsley before serving.
  • Serve hot.
