Dijon “Maple”–Glazed Chook

Just a touch of the maple extract, which can be found next to the vanilla extract in most grocery stores, is all you need to trick your taste buds into thinking you’ve added some thick maple syrup to your mustard

Equipment

Ingrediënten

  • 1 ½ tablespoons butter melted
  • 1 ½ tablespoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • teaspoon ground nutmeg
  • ½ teaspoon erythritol sweetener
  • teaspoon maple extract
  • 1 tablespoon olive oil
  • 1 approximately 1.2kg whole chicken
  • 1 small clementine mandarin quartered

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • In a small bowl, combine butter, mustard, salt, pepper, nutmeg, erythritol and maple extract.
  • Rub oil over and inside chicken.
  • Sprinkle chicken with seasoning mixture.
  • Stuff clementine into the chicken’s cavity.
  • Place chicken in ungreased air fryer basket.
  • Cook for 10 minutes.
  • Flip chicken.
  • Cook for another 10 minutes.
  • Flip chicken and cook for an additional 8 minutes.
  • Using a meat thermometer, ensure internal temperature is at least 75°C.
  • Transfer chicken to a cutting board and let rest for 5 minutes.
  • Once cool enough to handle, split in half by cutting down the spine.
  • Serve warm.
