Dijon Rosemary Pork Loin Roast

Ingrediënten

  • This meal is simply seasoned to accent and allow the beautiful pork flavour to shine through. Because the loin roast is a less fatty cut it is necessary to check the internal temperature toward the end of cooking. If overcooked, the roast can become dry. If cooked correctly, it is heaven!

Instructies

  • 1 ½ tablespoons Dijon mustard
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon dried rosemary
  • 1 (910 gram) boneless pork loin roast

Notes / Tips / Wine Advice:

Preheat air fryer at 180°C for 3 minutes.
In a small bowl, whisk together mustard, olive oil, salt, pepper and rosemary. Massage into loin on all sides.
Place pork in ungreased air fryer basket. Cook for 20 minutes. Flip and cook for an additional 20 minutes. Using a meat thermometer, ensure internal temperature is at least 70°C.
Transfer pork to a cutting board and let rest for 5 minutes before slicing and serving warm.
