Dilly Chicken Salad

This is the perfect meal to make and take along for a family outing — just stow beside a frozen ice pack and then enjoy this fresh meal out in nature!

Ingrediënten

  • 2 230 gram boneless, skinless chicken breasts, cut into 3cm cubes
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¾ cup mayonnaise
  • ¾ tablespoon fresh lime juice
  • 1 ½ tablespoons chopped fresh dill
  • ½ cup halved seedless red grapes
  • ½ cup finely chopped celery
  • 1 medium shallot peeled and diced

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • Season chicken with salt and pepper.
  • Add half of chicken cubes to ungreased air fryer basket.
  • Cook for 4 minutes.
  • Shake gently and flip chicken.
  • Cook for an additional 5 minutes.
  • Using a meat thermometer, ensure internal temperature is at least 75°C.
  • Transfer cooked chicken to a large plate.
  • Repeat cooking with remaining chicken.
  • Toss chicken into a large serving bowl with remaining ingredients.
  • Refrigerate covered for 1 hour up to overnight until ready to eat.
