Dilly Dinner Muffins

Sometimes when eating a low-carb diet, you just want a piece of bread. Try these dilly dinner muffins! The dill pairs nicely with the protein in a salmon fillet or grilled chicken, and the feeling of eating bread again will satisfy that craving — without sabotaging your diet.

Equipment

Ingrediënten

  • 1 cup almond flour
  • 1 teaspoon dried dill
  • teaspoon salt
  • ¼ teaspoon onion powder
  • 2 teaspoons baking powder
  • 1 large egg
  • ¼ cup plain Greek yoghurt
  • ¼ cup grated Parmesan cheese

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • In a medium bowl, combine almond flour, dill, salt, onion powder and baking powder.
  • Set aside.
  • In a separate small bowl, whisk together egg, yoghurt and Parmesan cheese.
  • Add wet ingredients to dry ingredients and combine until blended.
  • Transfer batter to six silicone muffin cups lightly greased with olive oil.
  • Place muffin cups in air fryer basket and cook for 12 minutes.
  • Serve warm.
