Eggplant Panini

Eggplant adds creaminess to the sandwich making it more delicious. When serving, you can complement it with salad or fries.

Ingrediënten

  • 1 small eggplant cut into ¼” slices
  • Salt and ground black pepper
  • 2 oz. divided olive oil
  • 1 loaf flatbread cut into 4 horizontal slices
  • 6 oz. sliced and drained jarred roasted red bell peppers
  • 4 oz. shredded mozzarella cheese
  • 2 oz. roasted garlic hummus

Instructies

  • In a bowl, put the eggplant, then sprinkle it with pepper and salt.
  • Set the eggplant aside for about 2 minutes to allow blending of the flavors.
  • On a frying pan with oil, sauté the eggplant for about 3 minutes on every side.
  • Preheat your panini press.
  • On a flat surface, place the bread, then layer aside with the red pepper, eggplant, and cheese.
  • Top the ingredients by spreading ½ oz.
  • of the garlic on the other bread piece.
  • Cover the sandwich.
  • Grill it for about 6 minutes until the cheese gets to melt.
