Eggplant Panini
Eggplant adds creaminess to the sandwich making it more delicious. When serving, you can complement it with salad or fries.
Ingrediënten
- 1 small eggplant cut into ¼” slices
- Salt and ground black pepper
- 2 oz. divided olive oil
- 1 loaf flatbread cut into 4 horizontal slices
- 6 oz. sliced and drained jarred roasted red bell peppers
- 4 oz. shredded mozzarella cheese
- 2 oz. roasted garlic hummus
Instructies
- In a bowl, put the eggplant, then sprinkle it with pepper and salt.
- Set the eggplant aside for about 2 minutes to allow blending of the flavors.
- On a frying pan with oil, sauté the eggplant for about 3 minutes on every side.
- Preheat your panini press.
- On a flat surface, place the bread, then layer aside with the red pepper, eggplant, and cheese.
- Top the ingredients by spreading ½ oz.
- of the garlic on the other bread piece.
- Cover the sandwich.
- Grill it for about 6 minutes until the cheese gets to melt.
