Fiesta Breakfast Casserole
Loaded with flavour,this casserole will have your taste buds doing a little dance. Not only is it atasty breakfast, but it could even be used as a Taco Tuesday meal, with thegreen chillies and avocado helping make your case. But do you really need anexcuse to eat breakfast for dinner?

- 5 large eggs
- 1 ½ tablespoons thickened cream
- ½ teaspoon ground cumin
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup loose cooked spicy breakfast sausage
- ½ cup Mexican blend cheese
- 1 large Roma tomato cored, seeded and diced
- 130 grams canned green chillies including juice
- 1 small avocado peeled, pitted and diced
Instructies
- Preheat air fryer at 160°C for 3 minutes.
- In a medium bowl, whisk together eggs, thickened cream, cumin, salt and pepper.
- Stir in sausage, Mexican blend cheese, tomato, chillies and avocado.
- Pour mixture into a cake barrel lightly greased with olive oil.
- Place barrel in air fryer basket and cook for 14 minutes.
- Transfer barrel to a cooling rack to cool for 5 minutes, then slice and serve warm.
