Fried Artichoke Hearts

Because the artichokehearts have already been softened and seasoned with salt and citrus from thelemon, it doesn’t take much to flavour these fried vegetables. Serve as a sideor atop a salad for a delicious change of pace.

  • 1 large egg
  • ¾ tablespoon Dijon mustard
  • ½ cup crushed pork rinds
  • ¼ cup almond flour
  • 420 grams artichoke hearts in water drained

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • In a medium bowl, whisk together egg and Dijon mustard.
  • In a separate shallow dish, combine pork rinds and almond flour.
  • Dip artichoke hearts in egg mixture, then coat in pork rind mixture.
  • Place half of prepared artichoke hearts in ungreased air fryer basket.
  • Cook for 7 minutes.
  • Transfer to a large serving plate and repeat cooking with remaining artichokes.
  • Serve warm.
