Fried Artichoke Hearts
Because the artichokehearts have already been softened and seasoned with salt and citrus from thelemon, it doesn’t take much to flavour these fried vegetables. Serve as a sideor atop a salad for a delicious change of pace.

- 1 large egg
- ¾ tablespoon Dijon mustard
- ½ cup crushed pork rinds
- ¼ cup almond flour
- 420 grams artichoke hearts in water drained
Instructies
- Preheat air fryer at 180°C for 3 minutes.
- In a medium bowl, whisk together egg and Dijon mustard.
- In a separate shallow dish, combine pork rinds and almond flour.
- Dip artichoke hearts in egg mixture, then coat in pork rind mixture.
- Place half of prepared artichoke hearts in ungreased air fryer basket.
- Cook for 7 minutes.
- Transfer to a large serving plate and repeat cooking with remaining artichokes.
- Serve warm.
