Ginger Sesame Chicken and Snow Pea Stir-Fry

- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon chile-garlic or curry sauce
- 1 tablespoon rice vinegar
- 2 teaspoons toasted sesame oil
- ½ lb. boneless skinless chicken breast, cubed
- 1 tablespoon fresh ginger peeled and minced
- 3 cups snow peas trimmed
- 3 green onions chopped
- 3 tablespoons unsalted cashews broken
- Cooked rice
Optional:
- Additional chile-garlic sauce
Instructies
- In a small bowl, combine soy sauce, chile-garlic or curry sauce, rice vinegar, and toasted sesame oil.
- Set aside.
- Heat oil in a skillet over medium-high heat.
- Add the cubed chicken and cook, stirring, until it is no longer pink in the center.
- Add minced ginger to the skillet and cook for about 30 seconds.
- Add snow peas and chopped green onions to the skillet.
- Cook until the snow peas are just tender, about 2 to 4 minutes.
- Pour the soy sauce mixture over the ingredients in the skillet.
- Stir to coat well.
- Stir in the broken cashews just before serving.
