Gingerbread Bacon Waffles

These fluffy, yet substantial waffles have the flavor of a rich molasses cookie. The bacon adds an extra complexity and cuts the sweetness just the right amount.

Ingrediënten

Makes 10-12 waffles

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • teaspoons baking soda
  • ½ teaspoon salt
  • 4 large eggs
  • ½ cup packed dark brown sugar
  • cups buttermilk
  • ¼ cup molasses
  • ½ cup 1 stick butter, melted
  • 8 slices Candied Bacon page 154 chopped
  • Cooking spray or melted butter for cooking

Instructies

  • Preheat waffle iron and oven to 200°F.
  • In a large bowl whisk together flour, baking powder, cinnamon, ginger, baking soda, and salt.
  • In a medium bowl, beat eggs and brown sugar with a whisk until combined, then beat in buttermilk, molasses and melted butter.
  • Stir the wet ingredients into the dry ingredients until just combined.
  • Do not overmix.
  • Gently fold in chopped Candied Bacon.
  • Coat waffle iron liberally with cooking spray or melted butter and cook waffles according to manufacturers instructions.
  • Serve immediately or keep warm in the oven until ready to serve.
  • Serve with your favorite toppings, such as, maple syrup and whipped cream.

Notes / Tips / Wine Advice:

Over the top bacon lover’s tip:
Brush waffle iron with a little melted Clarified Bacon Fat before cooking the waffles.
