Gingerbread Bacon Waffles
These fluffy, yet substantial waffles have the flavor of a rich molasses cookie. The bacon adds an extra complexity and cuts the sweetness just the right amount.
Ingrediënten
Makes 10-12 waffles
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1½ teaspoons baking soda
- ½ teaspoon salt
- 4 large eggs
- ½ cup packed dark brown sugar
- 1½ cups buttermilk
- ¼ cup molasses
- ½ cup 1 stick butter, melted
- 8 slices Candied Bacon page 154 chopped
- Cooking spray or melted butter for cooking
Instructies
- Preheat waffle iron and oven to 200°F.
- In a large bowl whisk together flour, baking powder, cinnamon, ginger, baking soda, and salt.
- In a medium bowl, beat eggs and brown sugar with a whisk until combined, then beat in buttermilk, molasses and melted butter.
- Stir the wet ingredients into the dry ingredients until just combined.
- Do not overmix.
- Gently fold in chopped Candied Bacon.
- Coat waffle iron liberally with cooking spray or melted butter and cook waffles according to manufacturers instructions.
- Serve immediately or keep warm in the oven until ready to serve.
- Serve with your favorite toppings, such as, maple syrup and whipped cream.
