Greens with Mango and Sunflower Seeds

Dry-roasted sunflower seeds top this refreshing chopped salad of romaine, cabbage, mango, and radishes, made with typical ingredients commonly found in outdoor markets throughout Mexico.

Ingrediënten

Makes 4 servings

  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 teaspoons white wine vinegar
  • ¼ teaspoon salt or to taste
  • 2 tablespoons olive oil
  • 1 mango peeled, pitted, and diced or coarsely chopped
  • 2 cups coarsely shredded romaine lettuce
  • 1 cup chopped cabbage
  • 6 to 8 radishes thinly sliced
  • ½ cup dry-roasted sunflower seeds

Instructies

  • In a small bowl, whisk together the lime juice, honey, vinegar, salt, and oil.
  • Set aside.
  • Put all of the remaining ingredients, except the sunflower seeds, in a large bowl.
  • Toss with the dressing.
  • Sprinkle with sunflower seeds.
  • Serve at once.
