Greens with Mango and Sunflower Seeds
Ensalada Verde de Mango y PepitasDry-roasted sunflower seeds top this refreshing chopped salad of romaine, cabbage, mango, and radishes, made with typical ingredients commonly found in outdoor markets throughout Mexico.
Ingrediënten
Makes 4 servings
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 2 teaspoons white wine vinegar
- ¼ teaspoon salt or to taste
- 2 tablespoons olive oil
- 1 mango peeled, pitted, and diced or coarsely chopped
- 2 cups coarsely shredded romaine lettuce
- 1 cup chopped cabbage
- 6 to 8 radishes thinly sliced
- ½ cup dry-roasted sunflower seeds
Instructies
- In a small bowl, whisk together the lime juice, honey, vinegar, salt, and oil.
- Set aside.
- Put all of the remaining ingredients, except the sunflower seeds, in a large bowl.
- Toss with the dressing.
- Sprinkle with sunflower seeds.
- Serve at once.
