Ingrediënten

Chinese Black Vinegar Sauce:

  • 6 tablespoons Chinese black vinegar
  • 4 teaspoons white sugar
  • 1 tablespoon crushed dry coriander place seeds in a small bowl and crush with the base of a glass
  • ½ cup sesame oil
  • 1 tablespoon chili paste with garlic

Eggplant:

  • 6 small eggplants
  • ½ cup extra virgin olive oil
  • ½ cup low-sodium soy sauce
  • Chinese black vinegar sauce prepared above

Instructies

Prepare Chinese Black Vinegar Sauce:

  • Combine Chinese black vinegar, white sugar, and crushed coriander in a small bowl.
  • Whisk in sesame oil until thick and soupy.
  • Whisk in the chili paste.

Prepare Eggplant:

  • Slice eggplant into ¾-inch thick rounds.
  • Salt both sides and place in a shallow bowl while preparing the sauce.
  • Rinse salt off the eggplant and blot dry with a paper towel. (The salt removes much of the bitterness.)
  • Brush both sides of the eggplant with olive oil and let it stand.
  • Mix the remaining olive oil with soy sauce.

Grill Eggplant:

  • Preheat the grill.
  • Grill the eggplant for about 4 minutes per side, brushing constantly with the oil/soy sauce mixture.

Serve:

  • Lay grilled eggplant on a platter and pour the prepared Chinese Black Vinegar Sauce over it.
