Grilled Zucchini
Calabacitas AsadasGrilling green or yellow zucchini (or a combination of both) is an excellent way to cook this versatile vegetable that's always available. Cook on a stovetop grill pan, or grill outdoors if you already have a hot grill going. Serve with poultry, meats, or fish.
Ingrediënten
Makes 4 servings
- 6 to 8 small zucchini
- 1 to 2 tablespoons olive oil
- Salt and freshly ground pepper to taste
Instructies
- Salt and freshly ground pepper, to taste
- Rinse the zucchini and pat dry.
- Trim off the ends.
- Thinly slice lengthwise.
- Brush both sides with oil.
- Heat a grill pan over medium heat until hot enough to make a few drops of water sizzle.
- Lay the zucchini slices on the pan.
- Season with salt and pepper, and cook until grill marks appear on the bottom, about 3 minutes.
- Turn and cook until crisp-tender and still bright green around the edges.
- Arrange the zucchini on a serving plate.
