Grilling green or yellow zucchini (or a combination of both) is an excellent way to cook this versatile vegetable that's always available. Cook on a stovetop grill pan, or grill outdoors if you already have a hot grill going. Serve with poultry, meats, or fish.

Ingrediënten

Makes 4 servings

  • 6 to 8 small zucchini
  • 1 to 2 tablespoons olive oil
  • Salt and freshly ground pepper to taste

Instructies

  • Salt and freshly ground pepper, to taste
  • Rinse the zucchini and pat dry.
  • Trim off the ends.
  • Thinly slice lengthwise.
  • Brush both sides with oil.
  • Heat a grill pan over medium heat until hot enough to make a few drops of water sizzle.
  • Lay the zucchini slices on the pan.
  • Season with salt and pepper, and cook until grill marks appear on the bottom, about 3 minutes.
  • Turn and cook until crisp-tender and still bright green around the edges.
  • Arrange the zucchini on a serving plate.

Serve hot or warm.
